Description

We offer organic juniper berry hydrolate for drinks, obtained from a plant of the species Juniperus communis. The product is offered under the name Juniper Berry organic hydrolate for drinks. Botanical classification places the species in the Cupressaceae family. Only the ripe fruits become raw material, and the scales of the female cone fuse tightly together, forming a fleshy structure with a uniform appearance. The reddish young cones turn blue-black with a dense waxy bloom when fully ripe. The plantations grow in Bulgaria under an organic regime, and synthetic agents are excluded. Steam distillation of the ripe, unfermented fruits keeps the aroma clean, because no solvents are involved in the extraction at all, and the volatile part comes from the fruit. The scent is due to the oxygenated volatile compounds that are retained in the aqueous phase of the distillate. The aroma remains strong. The fresh pine character acquires a resinous continuation in the overall scent of the distillate. Monoterpene hydrocarbons make up the main share of the volatile fraction, and the most prominent among them are pinene, myrcene and sabinene. The choice of fruit as raw material determines the faint color, as the water carries over mainly colorless substances, while the pigments remain in the fleshy coat. Storage
